Coconut Dreaming.


A blustery, raining winters day here and it's got me dreaming of tropical coconuts and sunny days, so here I have fused the two and created what looks like an ode to a snowy winter with the energy of summer! These delicious and super easy protein balls are packed full of flavor and nutrients to keep you going strong on the slopes all day, or paddling in the surf all summer. Bursting with nuts, chia, protein, coconut, coconut oil and gojis these guys are sure to set your tastebuds a light. Just be sure if you make a batch to hide them in the back of the fridge because if your like me then they wont stick around long....

Coconut dream protein balls

Makes 25 approx

Prep time: 10 mins

Set time: 1 hour

Ingredients

4 tbs organic virgin coconut oil

2 tbs honey

2 cups pitted medajool dates

1 cup roasted almonds

1 cup fresh walnuts

1 scoop Prana On coconut milk protein powder

½ cup toasted pepitas

½ cup sunflower seeds

1 cup toasted shredded coconut flakes split in 2

2 tbs chia seeds

2 tbs goji berries

2 tbs craisins

Method

  1. In a small pot, melt coconut oil and honey, then set aside.

  2. In a food processor, add all other ingredients making sure to leave ½ cup of your coconut flakes to coat the balls in.

  3. Add melted ingredients then pulse until rough and combined, adding a few tablespoons of water if needed to bind the mixture.

  4. Using wet hands, roll into 50c sized balls onto a tray lined with baking paper.

  5. Once all rolled, sprinkle over your coconut flakes and gently roll to cover them all, reshaping balls as needed.

  6. Place in the refrigerator for an hour to set, then store in an airtight container for as long as they last, which isn’t long, trust me.
